Strawberry Lavender Simple Syrup

Add some sparkle and flavour to your summer gatherings with delicious summer mocktails! Strawberries and Lavender are a match made in heaven - make this simple syrup when fields are full of sweet strawberries. 

We grow all sorts of berries at our farm and love to create flavourful fruit and herb syrups to enjoy throughout the summer months.

If you haven't time to make your own fruit syrups, you can improvise with Lavender Simple Syrup. Place fresh berries into a glass, and lightly crush with a wooden spoon. Drizzle 5-15mL of lavender syrup over berries, then fill the glass with chilled sparkling water. Refreshing and delicious! 

Strawberry Lavender Syrup

400g fresh strawberries (4 cups)

250mL water (1 cup) 

250mL lavender infusion (see method below)

30mL lemon juice (2 tbsp)

200g sugar (1 cup)

Bring water to a boil, add strawberries and reduce heat to medium, stirring constantly until fruit begins to break down. Add lavender infusion, and return to a rolling boil, stirring constantly. Add lemon juice and sugar, stir until sugar is completely dissolved.

Remove from heat and allow to cool. Use immersion blender to puree syrup. Pour into sterilized bottles or jars. Store in fridge and use within one month.

Lavender InfusionBoil water in kettle. Measure 250mL water into a bowl. Add 30mL/2 tbsp Culinary LavenderLet stand 5-10 minutes. Strain through a sieve.

Notes:

  • strain through a sieve to remove strawberry pulp if desired
  • reduce sugar by half if desired
  • substitute honey for sugar if desired 
  • use to make refreshing Italian Sodas - add a scoop of vanilla ice cream to create a Strawberry Lavender float!
